Did you know that to stop your eyes from watering when chopping onions, you must place them in the freezer for 10 minutes before chopping!!
Thats an original New Scientist quote lol
I use pre-chopped frozen onions anyway :wink:

alternatively remove the very centre, that seems to work too...
I get my girlfriend to chop them.
Now the only tears are when I taste the cooking ..... :o

I think onion chopping is a serious and often overlooked subject, and does warrant in depth and searching discussion.
In today's world of international terrorism, global warming and multi-national conglomerate expansion we MUST, I repeat MUST ensure we're prepared to be able to make fine onion soup without floods of tears.

Science is power, obviously, so once you know that most of the causal agent is contained at the root end of the vegetable, you can begin to cut the risk by removing a larger slice from that end before you start chopping.
However....this also reduces the flavour as, in an onion, the eye-watering property is also the flavour property.
Therefore, the thing to do is to reduce/capture the droplets of stinging enzymes that are released into the air by the chopping process. Cut onions under running water (also flavour reducing unfortunately....and not very convenient if you don't have an aqua-lung about you) or, best bet.....hold a spoon in your mouth, bowl inverted down-wards to collect the droplets before they reach your nose.
This works....but looks a bit silly. So probably best to avoid onion in the salad that you are are tossing to impress. You don't want the smell of onion on the breath in this situation anyway.
